What is it about chocolate? We all have moments when we can't seem to get enough... and if we do overindulge, the guilt sets in later.
Luckily, there is a cure! A cozy cup of pre-portioned delicious chocolate cake!!
(photo from egglandsbest.com)My Mum sent me this recipe yesterday, and I was really tempted to throw together a "mug of love" before heading off to bed... but Ryan and I had snacked all day long. So between the Pizza Rolls (a huge guilty pleasure of ours), oatmeal raisin cookies, grapes, edamame, and apple slices with almond butter (it was a shmorgasbord!), among other goodies, I really had no room.
Instead I'm passing along the recipe to you... send me your pictures when you make your own mug!
I'll post mine when I "bake" one. You very likely will not have to wait long to see my pic!! :)
Here's the email my Mum sent:
Did you know that you could have delicious, homemade, warm chocolate cake in just five minutes? You can!( Thanks to this Eggland's Eggs recipe from Good Housekeeping - I made a "mug" of cake yesterday and it was D E L I C I O U S !!! - Love Mum :) xxx ooo )
INGREDIENTS:
2 tablespoons flour3 tablespoons sugar
2 tablespoons unsweetened cocoa
1 large Eggland's Best Egg
2 tablespoons milk
2 tablespoons vegetable oil
2 tablespoons chocolate chips (Note: I actually left these out 'cos I didn't have any in the pantry)
Small splash of vanilla extract
PREPARATION:
Add dry ingredients to mug and mix well. Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips and vanilla extract and mix again. Put the mug in the microwave and cook on high for 2 minutes. The cake may rise over the top of the mug, but don't be alarmed! Allow to cool and tip out onto a plate if desired.Does that not sound FABULOUS!!?? Can't wait to try it.

Matt & I tried this last night. In my attempt to ward off some chocolate-cake-while-we're-trying-to-get-healthy guilt, I substituted Egg Beaters for the one egg (sorry Egglands Best) and substituted 2 packets of Splenda for the 3 tbs of sugar. In hindsight, it needed more Splenda...probaby at least 3-4 packets...but all-in-all, I think it worked! Thanks for sharing! We miss you!!! :)

Yay! I'm glad you thought of substituting the sugar for something else... Ailsa called me to tell me how fattening this recipe was. But it's only ONE serving... so it'd be difficult to overindulge, unless you want to keep making mug after mug after mug!! I haven't made it yet - but I think I'll sub Truvia for the sugar. I'll let you know how it works out!
BTW - I saw you in the pictures from Ailsa's shindig on Saturday... you look amazing!!! Whatever you're doing, it's working!! Much love to you & Matt. Hope to see you guys before the year ends! mwah!!
